When my Sweet Potato began sprouting early this Spring during May 2020, it was time to cook the sweet potato ripened in the veggie basket among two (2) Spaghetti Squashes and a sweet onion someone gave me early this year. The thoughts of making a Sweet Potato Custard Pudding came to mind since one of my favorite childhood desserts is called "Boniatillo" in Spanish–a Cuban-American Sweet Potato casserole.
